T-Bone with Asian Mushrooms
- 4 x 300g T-Bone steaks
- 60ml oil
- 600g shiitake and oyster mushrooms
- Handful of chopped coriander
- Handful of chopped mint
- ½ bunch of chives
- 4 sliced celery stalks
- 2 carrots, cut into matchsticks
- 200g snow peas, sliced diagonally
- ½ sliced red onion
- For the Dressing
- 60ml soy sauce
- 60ml mirin
- 2 tbsp rice vinegar
- 1 chilli, chopped
- 2 tsp grated ginger
- 1 crushed garlic clove
- Place all of the ingredients into a jam jar, close the lid and give it a good shake. Set aside. Heat a barbecue or griddle and brush the steaks with half the oil, and season well. Cook, turning once, until done to your liking, then leave to rest for 5 mins. Meanwhile, toss the mushrooms with the remaining oil and cook for 3 mins or until lightly charred, then add to a bowl with half the dressing.
- Place the fresh herbs, celery, snow peas, red onion and carrot matchsticks to a bowl and toss in the remaining dressing. Serve alongside your steak topped with the mushrooms and chopped chives. Yum!
