T-Bone with Asian Mushrooms

  • 4 x 300g T-Bone steaks
  • 60ml oil
  • 600g shiitake and oyster mushrooms
  • Handful of chopped coriander
  • Handful of chopped mint
  • ½ bunch of chives
  • 4 sliced celery stalks
  • 2 carrots, cut into matchsticks
  • 200g snow peas, sliced diagonally
  • ½ sliced red onion
  • For the Dressing
  • 60ml soy sauce
  • 60ml mirin
  • 2 tbsp rice vinegar
  • 1 chilli, chopped
  • 2 tsp grated ginger
  • 1 crushed garlic clove
  • Place all of the ingredients into a jam jar, close the lid and give it a good shake. Set aside. Heat a barbecue or griddle and brush the steaks with half the oil, and season well. Cook, turning once, until done to your liking, then leave to rest for 5 mins. Meanwhile, toss the mushrooms with the remaining oil and cook for 3 mins or until lightly charred, then add to a bowl with half the dressing.
  • Place the fresh herbs, celery, snow peas, red onion and carrot matchsticks to a bowl and toss in the remaining dressing. Serve alongside your steak topped with the mushrooms and chopped chives. Yum!
