Tandoori Prawns

  • 400g raw king prawns, deshelled
  • 2 tsp Greek yoghurt
  • 1 tsp veg oil
  • 1 garlic clove, shredded
  • 3cm piece of ginger, shredded
  • 1 tsp salt
  • 2 tsp hot paprika
  • ½ tsp each chilli powder, garam masala, ground coriander
  • ¼ tsp crushed carom seeds
  • 3 tbsp ghee
  • Mix all the ingredients, apart from the ghee, in a large bowl and leave to marinate in the fridge for an hour or longer.
  • Place a frying pan on a medium heat and brush the pan with ghee. Place the prawns in a single layer in the pan and brush with any excess marinade. Cook for a minute and a half on each side, or until cooked through, then serve with your choice of salad and flatbreads.
