Tandoori Tofu Wraps
- 500g shredded red cabbage
- 4 tbsp yoghurt
- 3 tbsp mint sauce
- 400g tofu, cut into approx 15 cubes
- 2 tbsp tandoori curry paste
- 2 sliced onions
- 2 tbsp oil
- 2 sliced garlic cloves
- 8 chapatis or similar flatbread
- 2 limes, quartered
- Mix together the yoghurt, mint sauce, and cabbage with some seasoning, and set aside. Toss the tofu with 1 tbsp of oil and the curry paste, then heat up a frying pan and fry in batches until golden. Remove from the pan, set aside, then chuck in the onions and garlic to fry for 8 mins. Return the tofu to the pan, season well, and heat through.
- Warm the chapatis, then top each with the shredded cabbage, the curried tofu, and a good squeeze of fresh lime. Serve.
