Tandoori Tofu Wraps

  • 500g shredded red cabbage
  • 4 tbsp yoghurt
  • 3 tbsp mint sauce
  • 400g tofu, cut into approx 15 cubes
  • 2 tbsp tandoori curry paste
  • 2 sliced onions
  • 2 tbsp oil
  • 2 sliced garlic cloves
  • 8 chapatis or similar flatbread
  • 2 limes, quartered
  • Mix together the yoghurt, mint sauce, and cabbage with some seasoning, and set aside. Toss the tofu with 1 tbsp of oil and the curry paste, then heat up a frying pan and fry in batches until golden. Remove from the pan, set aside, then chuck in the onions and garlic to fry for 8 mins. Return the tofu to the pan, season well, and heat through.
  • Warm the chapatis, then top each with the shredded cabbage, the curried tofu, and a good squeeze of fresh lime. Serve.
