Thai Beef Chilli Salad
- 1 cucumber, spiralized into thin noodles or thinly sliced
- 1 beef steak, about 250g
- 2 tsp sunflower oil
- 100g bean sprouts
- Pack of coriander, chopped
- For the Dressing
- 1 crushed garlic clove
- 1 tbsp Thai fish sauce
- 1 tbsp brown sugar
- ½ lime, zest and juice
- 1 red chilli chopped
- Mix the dressing ingredients together in a small bowl, then toss with the cucumber in a salad bowl. Rub the steak with oil and season well. Fry for 2-3 mins on each side, then transfer to a plate.
- Assemble the salad by piling the vegetables on a plate and mixing with the bean sprouts and coriander. Top with sliced steak and the remaining dressing, and sprinkle with chopped chilli.
