Thai Beef Chilli Salad

  • 1 cucumber, spiralized into thin noodles or thinly sliced
  • 1 beef steak, about 250g
  • 2 tsp sunflower oil
  • 100g bean sprouts
  • Pack of coriander, chopped
  • For the Dressing
  • 1 crushed garlic clove
  • 1 tbsp Thai fish sauce
  • 1 tbsp brown sugar
  • ½ lime, zest and juice
  • 1 red chilli chopped
  • Mix the dressing ingredients together in a small bowl, then toss with the cucumber in a salad bowl. Rub the steak with oil and season well. Fry for 2-3 mins on each side, then transfer to a plate.
  • Assemble the salad by piling the vegetables on a plate and mixing with the bean sprouts and coriander. Top with sliced steak and the remaining dressing, and sprinkle with chopped chilli.
