Thai Crab Noodles
- 375g rice noodles
- 30ml oil
- 170g shredded crabmeat
- 4 sliced spring onions
- 2 tsp grated ginger
- 2 tsp garlic puree
- 1 tsp chilli puree
- 1 tbsp mirin
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 40g roasted peanuts
- Chopped coriander
- Cook the noodles according to pack instructions, then drain and set aside. Heat the oil in a wok and stir-fry the ginger, chilli and garlic for a minute. Toss in the shredded crab and stir-fry for 2 mins more, then toss in the noodles and stir to combine. Add the soy sauce, sesame oil and mirin, cook for a minute then serve scattered with peanuts and coriander. Yum!
