Thai Crab Noodles

  • 375g rice noodles
  • 30ml oil
  • 170g shredded crabmeat
  • 4 sliced spring onions
  • 2 tsp grated ginger
  • 2 tsp garlic puree
  • 1 tsp chilli puree
  • 1 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 40g roasted peanuts
  • Chopped coriander
  • Cook the noodles according to pack instructions, then drain and set aside. Heat the oil in a wok and stir-fry the ginger, chilli and garlic for a minute. Toss in the shredded crab and stir-fry for 2 mins more, then toss in the noodles and stir to combine. Add the soy sauce, sesame oil and mirin, cook for a minute then serve scattered with peanuts and coriander. Yum!
