Thai Sea Bass Recipe

What you'll need:

  • 2 seabass
  • 2cm fresh ginger cut into strips
  • 2 sliced garlic cloves
  • 1 long red chilli, cut into rings
  • ¼ bunch of Thai basil (or regular basil)
  • 2 tbsp fish sauce
  • 4 tbsp soy sauce
  • 1 tbsp clear honey
  • 4 pak choi, halved with core removed

Time: 30 mins

Serves: 4


Method

First

Get your oven fired up to 180C. On a lined baking tray, place your sea bass and stuff the belly cavity with the basil, ginger, garlic, and chilli. Mix together the honey, soy sauce, and fish sauce in a small bowl, and coat the whole fish with it.

Second

Place the pak choi around the fish, and cover the tray with aluminium foil.

Third

Cook in the oven for 10 minutes, then remove the foil, and cook for a further 15 minutes. Serve hot with rice, or with a fresh green salad.
