Thai Sea Bass
- 1 sea bass fillet
- 1 tsp olive oil
- 2 crushed garlic cloves
- 1 lemongrass stalk, finely chopped
- 1 tsp fresh thyme leaves
- Handful of fresh coriander, chopped
- 1⁄2 chilli, chopped
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 tsp chilli, chopped
- Bring a large pan of water to the boil, and place a steamer or colander on the top. Rub the fish fillet with olive oil, garlic, lemongrass, chilli, and thyme, place on a piece of foil, and transfer to the steamer. Cover, and steam for 5 minutes.
- Make the dressing by mixing the ingredients in a small bowl. Serve the fish fillet drizzled with dressing, alongside your favourite Asian salads or slaws.
