Thai-Style Fried Rice with Prawns
- 2 tbsp veg oil
- 1 sliced red onion
- 2 sliced garlic cloves
- 1 sliced red chilli
- 250g large prawns, peeled
- 300g cooked brown rice
- 75g peas
- 1 tbsp dark soy sauce
- 1 tbsp Thai fish sauce
- Small bunch of coriander, chopped
- 4 eggs
- Chilli sauce, to serve
- Heat 1 tbsp of oil in a wok and fry the onion, chilli and garlic for 3 mins. Add the prawns, cook for 1 min more, then tip in the peas and rice. Toss and fry for a couple of minutes, then pour in the soy sauce and fish sauce, along with the coriander. Heat the remaining oil in a pan and fry the eggs as you like them, season well, then serve the fried rice in bowls with an egg on top and drizzle of chilli sauce.
