Tikka Chicken Salad
- 100g chicken tikka breasts, cooked and sliced
- ½ courgette, peeled into ribbons
- 50g green lentils from a tin, drained
- 50g sliced cucumber
- 2 sliced spring onions
- Handful of chopped coriander
- 1 tbsp tzatziki
- Add the chicken pieces to a griddle pan and heat until char-marked. Remove from the pan to a serving plate and replace with the courgette ribbons. Cook on the griddle until softened and char-marked, then add to the plate with the chicken.
- Combine the lentils, cucumber, spring onions and coriander, and season well. Serve on a plate topped with the tikka chicken and courgette, and a big dollop of tzatziki. Easy!
