Tikka Pork Chops
- 4 boneless pork chops, 2.5cm thick
- 2 tbsp lemon juice
- ½ tsp each cayenne, turmeric and cumin
- 2 tsp paprika
- 2.5cm piece of ginger, grated
- 2 crushed garlic cloves
- 4 tbsp yoghurt
- Chips, to serve
- Place the chops between two sheets of film and bash with a rolling pin until 1cm thick. Prick all over with a fork, lay in a shallow dish and sprinkle with the lemon juice, cayenne pepper and some salt. Set aside for 10 mins. Meanwhile, mix the turmeric, paprika, cumin, ginger and garlic into the yoghurt. Rub this mixture all over the chops, then cover and marinate in the fridge for 8 hours.
- Preheat the grill to 190C. Place the chops on a grill pan, and grill for 5 mins on each side. When ready, serve with chips and mango chutney - nice!
