Tofu and Greens Stir Fry
- 2 tbsp oil
- 4cm piece of ginger, finely diced
- 2 crushed garlic cloves
- 1 chopped onion
- 125g mushrooms, quartered
- 300g broccoli, chopped
- 125g kale, chopped
- 200g tofu, cubed
- 2 tbsp soy sauce
- 2 tbsp toasted sesame seeds
- Stir-fry the ginger, onion and garlic in the oil for 3 mins, then tip in the mushrooms, kale, broccoli and tofu and toss everything together. Stir through the soy sauce, then cover and cook for 7 mins to steam. Stir-fry for another 2 mins, and serve sprinkled with sesame seeds and crushed chilli flakes.
