Tofu Sweet and Sour

  • For the Marinade
  • 2 grated garlic cloves
  • 2 tsp grated fresh ginger
  • 2 tbsp dark soy
  • 1 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp each of cumin seeds, nigella seeds, and fennel seeds
  • ½ tsp dried chilli flakes
  • ½ tsp yellow mustard seeds
  • ½ tsp sea salt flakes
  • For the Tofu
  • 150g firm tofu, drained and cut into 2cm cubes
  • 2 tbsp oil
  • 100g broccoli florets
  • 1 thinly sliced carrot
  • Rice, to serve
  • Make your marinade by mixing all of the ingredients together in a bowl. Add the tofu cubes and allow to sit for 15 mins.
  • Heat some oil in a wok, and stir fry the broccoli and carrot for 2 mins. Add the tofu along with the marinade, adding a splash of water to stop it sticking. Cook for 4 mins or until the tofu is hot, and the sauce is glossy and thickened. Serve with cooked rice.
