Traditional Zucchini Antipasti
- 4 small zucchini, grated
- 2 tbsp chopped mint
- 2 tbsp olive oil
- ½ lemon, juice only
- ½ crushed garlic clove
- 4 large tbsp grated pecorino cheese
- Salt and pepper
- Place the grated zucchini in a colander and season well with salt. Mix well, and then leave for 20 mins.
- Squeeze out the excess moisture from the zucchini, then mix with all of the other ingredients. Divide between 4 small plates, season with pepper, and enjoy as part of an aperitivo.
