Traditional Zucchini Antipasti

  • 4 small zucchini, grated
  • 2 tbsp chopped mint
  • 2 tbsp olive oil
  • ½ lemon, juice only
  • ½ crushed garlic clove
  • 4 large tbsp grated pecorino cheese
  • Salt and pepper
  • Place the grated zucchini in a colander and season well with salt. Mix well, and then leave for 20 mins.
  • Squeeze out the excess moisture from the zucchini, then mix with all of the other ingredients. Divide between 4 small plates, season with pepper, and enjoy as part of an aperitivo.
