Traybake with Meatballs and Garlic Bread
- 350g turkey mince
- 1 tsp dried oregano
- 1 tsp fennel seeds
- 1.5 tbsp olive oil
- 3 crushed garlic cloves
- 1 tbsp tomato purée
- 2 x 400g tins of chopped tomatoes
- 2 tsp sugar
- 150g torn mozzarella
- 4 garlic bread slices, chopped into chunks
- 25g mature cheddar, grated
- Mix together the fennel, oregano, mince, and some seasoning in a bowl. With damp hands, roll the mixture into walnut-sized balls. Heat half the oil in an oven-proof frying pan, and cook the meatballs until browned all over, then transfer to a plate and heat the oven to 200C. Heat the remaining oil in the pan and cook the onions for 10 mins to soften, then stir in the garlic, followed by the tomato purée, sugar, and chopped tomatoes.
- Simmer this mixture for 15 mins, then season well. Place the meatballs on top of your sauce, add the mozzarella, cheddar, and garlic bread chunks on top, then bake in the oven for 15 mins until golden and crisp. Serve with a salad or some pasta, and enjoy.
