Tuna Fagioli Salad

  • 160g quality tuna in spring water, drained
  • 400g tin of white beans, drained
  • 1 sliced red onion
  • 15g chopped parsley
  • 1 diced tomato
  • For the Dressing
  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • ½ lemon, juice only
  • 1 tsp honey
  • 1 thyme sprig, leaves picked
  • Place the tuna, beans, onion, parsley and diced tomato in a serving bowl and gently toss to combine, being careful not to break up the tuna too much. Season well.
  • Combine the dressing ingredients in a small jug, then dress the salad and leave to stand for 20 mins. When ready and the flavours have infused, serve with crackers or crusty bread.
