Tuna Fagioli Salad
- 160g quality tuna in spring water, drained
- 400g tin of white beans, drained
- 1 sliced red onion
- 15g chopped parsley
- 1 diced tomato
- For the Dressing
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- ½ lemon, juice only
- 1 tsp honey
- 1 thyme sprig, leaves picked
- Place the tuna, beans, onion, parsley and diced tomato in a serving bowl and gently toss to combine, being careful not to break up the tuna too much. Season well.
- Combine the dressing ingredients in a small jug, then dress the salad and leave to stand for 20 mins. When ready and the flavours have infused, serve with crackers or crusty bread.
