Tuna, Feta, and Quinoa Salad
- 100g quinoa
- 3 tbsp olive oil
- 1 lemon, juice only
- ½ tbsp white wine vinegar
- 120g tin of quality tuna, drained
- 1 avocado, cut into chunks
- 200g cherry tomatoes, halved
- 50g crumbled feta
- 50g spinach leaves
- 2 tbsp pumpkin seeds, lightly toasted
- Tip the quinoa into a saucepan and cover with water. Bring to the boil, then simmer for 15 mins until swollen. Drain, and transfer to a bowl. Meanwhile, combine the lemon juice, oil, and vinegar with some seasoning in a jug.
- Once the quinoa has cooled, mix with your dressing and all the other ingredients. Toss, season, and serve.
