Tuna, Feta, and Quinoa Salad

  • 100g quinoa
  • 3 tbsp olive oil
  • 1 lemon, juice only
  • ½ tbsp white wine vinegar
  • 120g tin of quality tuna, drained
  • 1 avocado, cut into chunks
  • 200g cherry tomatoes, halved
  • 50g crumbled feta
  • 50g spinach leaves
  • 2 tbsp pumpkin seeds, lightly toasted
  • Tip the quinoa into a saucepan and cover with water. Bring to the boil, then simmer for 15 mins until swollen. Drain, and transfer to a bowl. Meanwhile, combine the lemon juice, oil, and vinegar with some seasoning in a jug.
  • Once the quinoa has cooled, mix with your dressing and all the other ingredients. Toss, season, and serve.
