Tuna Steak with Mango Salsa
- 300g tuna steak
- 1 tbsp coconut oil
- 2 sliced spring onions
- 2 tbsp black-eyed beans from a tin, drained
- 1 diced avocado
- 100g diced mango
- 1 diced tomato
- 1 tbsp olive oil
- 1 lime, juice only
- 10g chopped coriander leaves
- Generously season the tuna steak, then fry in the coconut oil for 2 mins on each side. Transfer to a plate to rest. Mix all the remaining ingredients in a bowl and season, then spoon the salsa over the tuna steak to serve. Easy!
