Tuna Steak with Mango Salsa

  • 300g tuna steak
  • 1 tbsp coconut oil
  • 2 sliced spring onions
  • 2 tbsp black-eyed beans from a tin, drained
  • 1 diced avocado
  • 100g diced mango
  • 1 diced tomato
  • 1 tbsp olive oil
  • 1 lime, juice only
  • 10g chopped coriander leaves
  • Generously season the tuna steak, then fry in the coconut oil for 2 mins on each side. Transfer to a plate to rest. Mix all the remaining ingredients in a bowl and season, then spoon the salsa over the tuna steak to serve. Easy!
