Turkey and Basil Stir Fry
- 55g basil leaves, stems removed, chopped
- Veg oil for stir-frying
- 4 chopped garlic cloves
- 75g shallots, finely sliced
- 2 green chillies, sliced
- 2 red chillies, sliced
- 2.5cm piece of ginger, grated
- 450g turkey mince
- 5 tsp fish sauce
- 1.5 tsp brown sugar
- Heat about 4 tbsp of oil to your wok or frying pan, and chuck in the shallots and garlic to stir-fry for 2 mins. Add the ginger and chillies, and give a couple of vigorous stirs, then add the basil.
- Stir in the turkey mince, and fry the lot for about 4 mins, breaking up the lumps as you go. Once more or less cooked through, stir in the fish sauce and the sugar, then transfer to a serving dish and serve with crisp lettuce leaves, rice, and lime wedges.
