Turkey and Sage Bolognese
- Olive oil
- 1 chopped carrot
- 1 diced celery stalk
- 2 chopped garlic cloves
- 6 shredded sage leaves
- 500g turkey mince
- 800g tin of chopped tomatoes
- 6 sundried tomatoes, chopped
- 300g wholewheat spaghetti, cooked to serve
- Grated parmesan, to serve
- Add a splash of oil to a pan and cook the onion, celery, carrot and garlic for a few minutes to soften. Add the turkey and sage leaves, and cook for 5-7 mins more, stirring often.
- Add the tinned tomatoes and sundried tomatoes, along with about half a can of water. Bring to a simmer and cook for 30 mins to thicken the sauce. Toss the cooked spaghetti into the sauce, stir to coat, then serve with plenty of grated parmesan.
