Turkey Enchiladas
- 1 tbsp olive oil
- 1 crushed garlic clove
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 170g turkey mince
- 85g cheddar, grated
- 4 wholemeal tortilla wraps
- Heat up the olive oil in a pan, and toss in the onion, garlic, bell pepper, and zucchini. Lightly fry for 5 minutes, then add the turkey. Cook for 7 minutes or until cooked through. Sprinkle in half the cheese, and continue to cook until melted.
- Divide the turkey mixture between four tortillas, and roll them up into parcels. Place in a baking tray, sprinkle with the remaining cheese, and bake for 15 minutes or until golden.
