Turkey, Peppers and Hummus Burgers
- 500g baby new potatoes
- 500g turkey mince
- 1 egg yolk
- 1 crushed garlic clove
- 1 lemon, zest and juice
- 10g chopped parsley
- 3.5 tbsp olive oil
- 2 yellow peppers, halved
- 100g quality hummus
- ½ red onion, sliced
- 2 tsp Dijon mustard
- 2 tsp honey
- 125g baby leaf spinach
- 4 burger buns
- Preheat the grill to high. Boil the potatoes for 20 mins in salted water, then drain. Place the mince, egg yolk, lemon zest, parsley, garlic and some seasoning in a bowl and mash to combine, then shape into 4 patties. Brush each patty with oil and do the same with the pepper halves, then cook for 8 mins on each side until cooked through and the peppers are softened.
- Whisk 2 tbsp of oil with the honey, lemon juice and mustard and toss in half the spinach and boiled potatoes. Split the rolls and grill them for 1 min or until golden. Load the bases with 1 tbsp of hummus, the spinach, onion, pepper and burgers, then add the top of the buns and serve with the potatoes on the side.
