Turkish Minced Meat Flatbread

  • 2 x large Turkish/Middle Eastern flatbreads
  • 1 tbsp olive oil
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 3 tsp tomato purée
  • 250g minced lamb
  • ½ tsp salt and pepper
  • Fresh coriander and mint leaves, to serve
  • Preheat the oven to 180C. Pour the oil into a large pan and add the mince, spices, salt and pepper. Cook for 4 mins, stirring to break up the meat, and then add the tomato purée and cook for 1-2 mins more. Set aside.
  • Heat the flatbreads for a few mins in the oven or in a dry pan, then smear all over with the mince mixture. Drizzle with olive oil, then pop them in the oven for 3 mins. Serve hot.
