Tuscan Beans on Toast

  • 2 tbsp olive oil
  • 1 red onion, chopped
  • 1 crushed garlic clove
  • 227g chopped tomatoes
  • 400g tin of haricot beans, drained
  • 1 sprig of rosemary
  • 2 slices of sourdough, toasted
  • 1⁄4 garlic clove for rubbing
  • Salt and pepper
  • Gently fry the onion and garlic for a few minutes in the olive oil, then add the tomatoes, rosemary, and beans. Season well and simmer for 5 minutes, stirring occasionally until it thickens. Drizzle some olive oil over your toast and rub with garlic, then pile the beans on top. Perfect!
