Tuscan Beans on Toast
- 2 tbsp olive oil
- 1 red onion, roughly chopped
- 1 crushed garlic clove
- 227g tin of chopped tomatoes
- 400g tin of haricot beans, drained
- 1 sprig of rosemary
- 2 slices of sourdough toast
- 1⁄4 garlic clove
- Salt and pepper
- Gently fry the onion and crushed garlic for a couple of minutes in olive oil, until softened. Add the beans, tomato, and rosemary, and cook for 5 minutes. Season well.
- Drizzle the toast with olive oil and rub with garlic. Spoon the bean mixture on top, and add some fresh black pepper. Enjoy!
