Ultimate Kimchi Toastie
- 100g grated cheddar
- 70g grated mozzarella
- 3 sliced spring onions
- 2 tbsp mayo
- 4 slices white sourdough
- 180g drained kimchi
- 1 tsp sesame seeds
- Mix the cheeses and spring onions in a small bowl. Slather one side of the sourdough slices with mayo, then pile the cheese mix onto the plain sides of the bread. Spoon on the kimchi, sandwich them together so the mayo-covered sides are on the outside, then sprinkle with sesame seeds. Heat a large griddle pan and cook for 4-6 mins, then flip and cook for 5 mins more. Serve cut in half, with salads and pickles on the side.
