Ultimate Veggie Traybake
- 3 red capsicums, chopped
- 2 red onions, 1 diced, 1 chopped into chunks
- 1 tbsp Mexican or Cajun seasoning
- 2 tbsp veg oil
- 300g cherry tomatoes, halved
- 1 lime, juice only
- ½ tsp sugar
- 1 x 400g tin of kidney beans, drained
- 85g tortilla chips
- 60g grated cheddar
- 4 eggs
- Salt and pepper
- Preheat the oven to 220C. Toss the capsicums and onion chunks with the seasoning and oil, and chuck into a roasting tin. Roast for 10 mins, then stir in the tomatoes and roast for 10 mins more. Meanwhile, mix the diced onion, lime juice, and some salt, pepper, and sugar in a bowl. Mix well, and leave to pickle.
- Stir the beans into the roasted veggies, and make 4 spaces or wells in the roasting tray about 10cm in diameter. Toss together the chips and cheese, and stack in 4 piles among the veggies. Crack the eggs into the spaces, scatter any remaining cheese over the top, and cook for 8 mins more before serving. Serve with your pickled onions, and any other sides you fancy. Delicious!
