Vegan Chilli Loaded Fries
- 400g French fries, cooked
- 2 tbsp olive oil
- 1 chopped onion
- 1 avocado
- ½ lime, juice only
- ½ chopped red onion
- 1 chopped tomato
- 1 crushed garlic clove
- ½ tbsp chipotle paste or similar
- ½ tsp each ground cumin and coriander
- 400g tin of mixed beans, drained
- ½ 400g tin of chopped tomatoes
- Small bunch of coriander, chopped
- Heat the oil in a pan and fry the onion for 10 mins. Meanwhile, mash the avo with the lime juice, red onion, and chopped fresh tomato to make your guacamole.
- Add the chipotle, garlic, and ground spices to the onions along with some seasoning, fry for a minute or two, then tip in the chopped tomatoes and mixed beans. Simmer for 10 mins, add the chopped coriander, and check your seasoning. Serve on top of freshly-made French fries with your guacamole on the side or spooned on top. Yes please!
