Vegan Exotic Panna Cotta

  • 275ml coconut cream
  • 235ml soy milk
  • 4 passion fruits
  • 1 lime, juice only
  • 2 tbsp vanilla sugar
  • ½ tsp ground nutmeg
  • 2 tbsp dairy-free coconut yoghurt
  • 2 tbsp syrup
  • 1 tbsp dissolved agar-agar
  • 3 tbsp coconut sugar
  • Tropical mixed fruit, to serve
  • Combine the soy milk and coconut cream in a saucepan and gently heat, then stir in the passion fruit and lime juice. Blend with a hand blender until nice and smooth, then stir in the spices, sugar and syrup. Slowly bring to the boil and stir in the agar-agar.
  • Remove from the heat and pour the mixture into 3 serving cups or dessert glasses. Leave to refrigerate until completely cooled and set, then serve with mixed tropical fruit on top.
