Vegan Truffles
- 75g stevia
- ½ tsp sea salt
- 200g 100% cocoa solids dark chocolate, chopped
- 100g cocoa powder
- 2 tsp olive oil
- Add the stevia and salt to a saucepan with 200ml water. Bring the mixture to a simmer, then place the chocolate in a heatproof bowl and pour over half the hot liquid. Whizz with a stick blender, allow to emulsify, then add the remaining liquid and whisk until glossy. Pour in the olive oil, whizz again, then leave to cool before popping in the fridge for an hour.
- With a teaspoon, scoop out 40 pieces of your chocolate ganache. Toss the truffles through cocoa powder to coat, then shake in a sieve to remove any excess. Allow to come to room temperature for 10 mins, then share with friends and enjoy.
