Vegetable Yaki Udon Noodles
- 1.5 tbsp sesame oil
- 1 red onion, sliced
- 160g snow peas
- 70g baby corn, halved
- 2 baby pak choi, quartered
- 3 sliced spring onions
- 1 crushed garlic clove
- 1 tsp garam masala
- 4 tsp soy sauce
- 300g ready-to-cook udon noodles
- 1 tbsp sushi ginger, chopped
- Heat the oil in a wok and fry the onion for 5 mins. Stir in the snow peas, pak choi, corn and spring onions, and cook for 5 mins more. Add the garam masala, soy sauce and garlic, cook for 1 more minute, then stir in the ginger and udon noodles, along with 3 tbsp of hot water. When everything is heated through, divide into bowls and serve.
