Vegetable Yaki Udon Noodles

  • 1.5 tbsp sesame oil
  • 1 red onion, sliced
  • 160g snow peas
  • 70g baby corn, halved
  • 2 baby pak choi, quartered
  • 3 sliced spring onions
  • 1 crushed garlic clove
  • 1 tsp garam masala
  • 4 tsp soy sauce
  • 300g ready-to-cook udon noodles
  • 1 tbsp sushi ginger, chopped
  • Heat the oil in a wok and fry the onion for 5 mins. Stir in the snow peas, pak choi, corn and spring onions, and cook for 5 mins more. Add the garam masala, soy sauce and garlic, cook for 1 more minute, then stir in the ginger and udon noodles, along with 3 tbsp of hot water. When everything is heated through, divide into bowls and serve.
