Vegetarian Bean Goulash

  • 2 tbsp olive oil
  • 1 chopped onion
  • 1 tbsp smoked paprika
  • 400g tin of chopped tomatoes with herbs and garlic
  • 400g tin of mixed beans, drained
  • Heat the oil in a saucepan and fry the onion for 5 mins. Stir in the paprika and fry for a further minute, then add the tomatoes and ½ a can of water. Simmer for 10 mins, or until nicely thickened. Tip in the beans and cook for 4 mins more, season liberally and serve in bowls with a dollop of soured cream and some toast. Perfect!
