Venison and Bacon Burgers
- 250g venison mince
- 75g smoked streaky bacon, finely diced
- 1 garlic clove, crushed
- 20g chopped chives
- 1 egg yolk
- ½ tsp salt and pepper
- 6 dried juniper berries, crushed
- Buns, blue cheese, salad and all your favourite toppings
- Mix all of the ingredients (except the buns, cheese etc) in a bowl and form into 2 thick patties. Rub each side of the burgers with a little oil, then cook in a hot pan for 3-4 mins on each side. Leave to rest for 5 mins, then serve in buns with sliced blue cheese, salad leaves and whatever else you fancy.
