Venison and Bacon Burgers

  • 250g venison mince
  • 75g smoked streaky bacon, finely diced
  • 1 garlic clove, crushed
  • 20g chopped chives
  • 1 egg yolk
  • ½ tsp salt and pepper
  • 6 dried juniper berries, crushed
  • Buns, blue cheese, salad and all your favourite toppings
  • Mix all of the ingredients (except the buns, cheese etc) in a bowl and form into 2 thick patties. Rub each side of the burgers with a little oil, then cook in a hot pan for 3-4 mins on each side. Leave to rest for 5 mins, then serve in buns with sliced blue cheese, salad leaves and whatever else you fancy.
