Walnut and Blue Cheese Orzo
- Handful of chopped walnuts, toasted
- Knob of butter
- 1 chopped red onion
- 2 sliced leeks
- 160g orzo
- 700ml chicken stock
- Chopped parsley
- 100g crumbled gorgonzola or similar
- Melt the butter in a large frying pan and sizzle the onion for 5 mins with a pinch of salt. Add the leeks, cook for 5 mins more, then stir in the orzo to coat in the butter. Pour in the stock, 2 ladles at a time, and once the liquid is almost absorbed, add some more. Stir occasionally and cook until the orzo is tender.
- Stir in most of the walnuts and parsley, all the gorgonzola, and plenty of black pepper. Season again to taste, then serve topped with more cheese, more nuts and more parsley. Enjoy.
