Warm Bacon Salad
- 3 tbsp olive oil
- 2 rashers of smoked back bacon
- 1 tomato, deseeded and chopped
- 55g wild rocket
- 1 tbsp chives, chopped
- Salt and pepper
- Heat one tbsp of olive oil in a pan, and fry the bacon until golden and crisp. Remove from the pan, and tear each rasher into three.
- Place the bacon into a bowl, along with the other ingredients, and toss well. Serve warm.
