Warm Bacon Salad

  • 3 tbsp olive oil
  • 2 rashers of smoked back bacon
  • 1 tomato, deseeded and chopped
  • 55g wild rocket
  • 1 tbsp chives, chopped
  • Salt and pepper
  • Heat one tbsp of olive oil in a pan, and fry the bacon until golden and crisp. Remove from the pan, and tear each rasher into three.
  • Place the bacon into a bowl, along with the other ingredients, and toss well. Serve warm.
