Warm Cucumber, Lemon and Herb Side Salad
- 2 tbsp olive oil
- Handful of chopped mint
- 2 cucumbers, cut into ribbons with a peeler
- Handful of chopped dill
- Handful of chopped parsley
- ½ lemon, zest and juice
- Heat the oil in a saucepan and cook the mint for 1 min, then stir in the ribboned cucumber. Toss well and cook for 3 mins to warm.
- Remove from the heat and toss through the parsley and dill. Drizzle with lemon juice, tip onto a serving plate and scatter with lemon zest, salt and pepper.
