Warm Cucumber, Lemon and Herb Side Salad

  • 2 tbsp olive oil
  • Handful of chopped mint
  • 2 cucumbers, cut into ribbons with a peeler
  • Handful of chopped dill
  • Handful of chopped parsley
  • ½ lemon, zest and juice
  • Heat the oil in a saucepan and cook the mint for 1 min, then stir in the ribboned cucumber. Toss well and cook for 3 mins to warm.
  • Remove from the heat and toss through the parsley and dill. Drizzle with lemon juice, tip onto a serving plate and scatter with lemon zest, salt and pepper.
