Warm Salad with Black Pudding, Bacon and Blue Cheese
- 250g baby new potatoes, sliced into 1cm discs
- 100g black pudding, sliced
- 125g smoked streaky bacon, chopped
- 110g rocket salad
- For the Sauce
- 25g blue cheese
- 1 tbsp crème fraîche
- 1 tsp red wine vinegar
- Place the sliced potatoes into a saucepan and boil for 10 mins or until tender. Drain thoroughly. Meanwhile, add the bacon to a frying pan and cook for 3 mins, then add the black pudding and cook for 5 mins more or until crisp at the edges.
- Remove the pan from the heat and add the potatoes to the mixture. Place in a bowl with the salad leaves and toss to combine. Add the sauce ingredients to the pan and leave to melt together - don’t boil! - then drizzle all over the warm salad. Serve immediately.
