Warm Salmon Salad with Lemon and Herb Dressing
- 2 slices of white bread
- 2 tbsp chopped parsley
- 100g salmon fillet, skin removed
- 1 tbsp butter
- 1 tbsp olive oil
- Steamed asparagus, to serve
- For the Dressing
- 1 lemon, juice only
- 3 tbsp chopped mixed green herbs
- 3 tbsp olive oil
- Salt and pepper
- Chuck the bread, parsley and some salt and pepper into a food processor and blitz until it resembles green breadcrumbs. Roll the salmon in the mixture until well coated, then fry in the butter and oil for 3 mins on each side or until cooked to your liking.
- Mix the dressing ingredients in a small bowl and season to taste. Serve the salmon on a bed of steamed asparagus with plenty of the dressing drizzled over the top. Perfect!
