Warm Salmon Salad with Lemon and Herb Dressing

  • 2 slices of white bread
  • 2 tbsp chopped parsley
  • 100g salmon fillet, skin removed
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Steamed asparagus, to serve
  • For the Dressing
  • 1 lemon, juice only
  • 3 tbsp chopped mixed green herbs
  • 3 tbsp olive oil
  • Salt and pepper
  • Chuck the bread, parsley and some salt and pepper into a food processor and blitz until it resembles green breadcrumbs. Roll the salmon in the mixture until well coated, then fry in the butter and oil for 3 mins on each side or until cooked to your liking.
  • Mix the dressing ingredients in a small bowl and season to taste. Serve the salmon on a bed of steamed asparagus with plenty of the dressing drizzled over the top. Perfect!
