Whipped Brie Salad

  • 600g quality brie
  • 80g chopped dates
  • 120g rocket leaves
  • 100g croutons
  • 100g halved walnuts
  • For the Dressing
  • 6 tbsp walnut oil
  • 2 tbsp balsamic vinegar
  • Carefully remove the rind of the brie and discard. Add the cheese to a bowl, then whisk thoroughly until pale, creamy and spoonable. Once done, add the oil and vinegar to a separate small bowl, whisk together and season to make a dressing.
  • Add the walnuts to a salad bowl with the rocket and dates, and mix in a splash of the dressing. Add a spoonful of the whipped cheese to the centre of each serving plate, arrange the salad around it and drizzle with some dressing to serve.
