White Asparagus and Prosciutto Salad

  • 16 white asparagus
  • 4 slices of prosciutto or jamon Serrano
  • For the Dressing
  • 1 tbsp fresh lemon juice
  • 2 tbsp mustard
  • 1 tsp honey
  • 3 tbsp hazelnut oil (or olive oil)
  • 1 tbsp chives, chopped
  • If using fresh asparagus, trim and peel the stems then boil in salted water for 12 mins until tender. Drain well. Meanwhile, whisk together the lemon, mustard, and honey with some seasoning, then mix in the oil and stir in the chives. Divide the asparagus between 4 plates, lay the slices of ham on top, and drizzle with the dressing. Perfect!
