White Fish, Coconut and Green Bean Curry
- 1 chopped red onion
- 20g chopped ginger
- 3 garlic cloves
- 2 tbsp curry powder
- 10g chopped coriander
- 1 tbsp veg oil
- 400g tin of coconut milk
- 520g white fish fillets
- 500g green beans, trimmed
- 1 lime, juice only
- Cooked rice, to serve
- Chuck the onion, garlic, ginger, curry powder and half the coriander into a blender with a splash of water to make a paste. Heat the oil in a lidded pan and fry the paste for 3 mins, then stir in the coconut milk and some seasoning, and bring to a simmer.
- Nestle the fish into the pan and add the green beans. Cover and simmer for 10 mins, then remove the lid, stir gently and cook for 5 mins more. Season to taste, sprinkle with lime juice and serve with rice.
