White Fish, Coconut and Green Bean Curry

  • 1 chopped red onion
  • 20g chopped ginger
  • 3 garlic cloves
  • 2 tbsp curry powder
  • 10g chopped coriander
  • 1 tbsp veg oil
  • 400g tin of coconut milk
  • 520g white fish fillets
  • 500g green beans, trimmed
  • 1 lime, juice only
  • Cooked rice, to serve
  • Chuck the onion, garlic, ginger, curry powder and half the coriander into a blender with a splash of water to make a paste. Heat the oil in a lidded pan and fry the paste for 3 mins, then stir in the coconut milk and some seasoning, and bring to a simmer.
  • Nestle the fish into the pan and add the green beans. Cover and simmer for 10 mins, then remove the lid, stir gently and cook for 5 mins more. Season to taste, sprinkle with lime juice and serve with rice.
